This hummus dip has only a few ingredients and is vegan. We love the bright green color and the zesty lemon taste. Enjoy with chips and veggies, or on a sandwich.
- 1 can garbanzo beans, drained well
- 2 cloves garlic
- Juice from half a lemon
- 1 tablespoon olive oil
- 2 tablespoons spinach powder
- 1/2 teaspoon salt
- Add all ingredients to food processor and mix until thick and creamy. Scrape down the sides to make sure everything gets mixed together evenly.
- Store in airtight container in the fridge for up to four days.
